Stone Fruit Tabouli

Stone Fruit & Heirloom Tomato Tabouli
Serves 4-5
Cooking Time: 30-35 Minutes | Chilling Time: 1-2 Hours
Ingredients:
1 1/2 cups water
3 tbsp olive oil, divided
1 lemon, juiced
1 medium heirloom tomato, diced, juices reserve
1 garlic clove, minced
2-3 stone fruits, diced (peaches, apricots, nectarines)
1 cup chopped fresh herbs (mint, parsley, basil)
1/4 cup red or sweet onions, diced
salt & pepper to taste
Cooking Directions:
- Rinse the bulgur until the water runs clear. Bring the water to a boil in a medium pot. Add the bulgur with a pinch of salt, reduce the heat to medium-high, cover, and simmer for 10-12 minutes, until the water is mostly absorbed.
- Stir the bulgur, turn off the heat, cover, and let it rest for 10-12 minutes. Fluff with a fork. If water remains, strain the bulgur. Stir in 1 tbsp olive oil and salt to taste. Let it cool for 30 minutes; or spread out on a sheet pan for quick cooling.
- In a large bowl, whisk together 2 tbsp oil, lemon juice, reserved tomato juices, minced garlic, and the dry herb mix. Season to taste with salt and pepper. Stir in the cooled bulgur.
- Gently mix in the tomatoes, fruit, and fresh herbs. Season to taste. Chill for two hours before serving with fresh pita or grilled fish.
