The result is a vibrant, crowd-pleasing dip that also makes a flavorful spread for sandwiches.<\/p>\n<p><strong>Serves 6<\/strong><\/p>\n<p><strong>Cooking Time: 35-45 Minutes<\/strong><\/p>\n<p><strong>In the Kit:<\/strong><br \/>\nSplit Channa Dal<br \/>\nGarnishing oil spices include dill seeds that aid digesting lentils<\/p>\n<p><strong>Ingredients:<br \/>\n<\/strong><br \/>\n3\u00bc cups water<br \/>\n1 medium golden beet diced \/ \u00bd cup carrots diced \/ 1 cup roasted red peppers<br \/>\n3 tbsp + 2 tbsp olive oil, divided<br \/>\n2 garlic cloves, chopped<br \/>\n1 lemon, juiced<br \/>\n2 tbsp fresh herbs, minced (dill \/ parsley)<br \/>\nsalt to taste<\/p>\n<p><strong>Cooking Directions:<\/strong>\u2018<\/p>\n<ol>\n<li>Rinse the lentils until the water runs clear. Place the lentils and the root veggies in a<br \/>\nlarge heavy-bottomed pot with the water. Bring to a boil, reduce to simmer, cover and cook for 30-35 minutes. Add a big pinch of salt after 15 minutes. The lentils are<br \/>\ndone when they can be mashed with a spoon.<\/li>\n<li>Drain excess water, reserving the cooking liquid. Cool for 10 minutes. Place in a<br \/>\nblender with the garlic, olive oil, lemon juice, and blend until smooth. Add<br \/>\ncooking liquid if needed. Adjust the salt to taste.<\/li>\n<li>In a small saucepan, heat 2 tbsp oil. Add the garnish spices and stir-fry for 3-5<br \/>\nseconds, let the seeds sputter. Remove from the heat and cool.<\/li>\n<li>Transfer the hummus to a bowl, drizzle with the spices &amp; oil, and fresh herbs.
