It\u2019s what Ma lovingly made for Papa, and this version\u2014spiced with a touch more masala\u2014is my own take on that family tradition. A simpler form of khichree is even one of the first solid foods we introduce to children.<\/p>\n<p>Rooted in Ayurvedic principles, I find myself reaching for the comforting yogic\u00a0<a href=\"https:\/\/forkonaroad.com\/store\/khichree-risotto-1\/\"><strong><span style=\"color: b32124;\">Khichree Kit<\/span><\/strong><\/a>\u00a0after a week of heavier meals. It\u2019s grounding, soothing, and deeply nourishing\u2014just what your body needs to reset.<\/p>\n<p><strong>Serves 2-4<\/strong><\/p>\n<p><strong>Cooking Time: 30-45 Minutes<\/strong><\/p>\n<p><strong>Ingredients You\u2019ll Need:<\/strong><\/p>\n<p>2 tbsp ghee \/ olive oil, divided<br \/>\n1\/2 cup diced onion<br \/>\n2 tsp minced garlic, divided<br \/>\n1 tsp minced ginger<br \/>\n1 cup diced carrots, peas, or green beans (optional)<br \/>\n4 cups water<br \/>\n4 cups chopped greens<br \/>\nplain yogurt for serving (optional)<br \/>\nsalt to taste<\/p>\n<p><strong>Cooking Directions:<\/strong><\/p>\n<ol>\n<li>Rinse the khrichee mix and soak in hot water while you prep.<\/li>\n<li>In a large pot, heat 1 tbsp of oil over medium heat. Add the whole spices and stir for 20 seconds. Add the onion, garlic, ginger, and stir-fry for 1 minute. Add the ground spice blend and stir-fry for 30 seconds. If using veggies, add them now.<\/li>\n<li>Drain the khrichee mix, add to the pot and stir for 2 minutes. Add the water, a pinch of salt. Bring to a boil, cover and simmer for 35-45 minutes until creamy and risotto-like.<\/li>\n<li>In a separate skillet, heat 1\/2 tbsp oil, stir-fry the remaining garlic and greens until wilted. Season to taste.<\/li>\n<li>Before serving, stir in 1\/2 tbsp ghee (if using). Serve with garlicky greens and plain yogurt.<\/li>\n<\/ol>\n<p><strong>Cook in the Instant Pot\u00ae<\/strong>: Rinse the khichree mix according to step 1. Using the\u00a0<strong>Saut\u00e9 mode<\/strong>, follow step 2. Add the khichree mix, stir-fry for 1 minute. Add 1\u00be cups water and a pinch of salt. Attach the lid and select\u00a0<strong>High Pressure<\/strong>\u00a0for 10 minutes. When done, turn off the Instant Pot and\u00a0<strong>release the pressure naturally<\/strong>. Remove the lid safely. If all the water is absorbed, stir in \u00bc cup hot water, until creamy. Stir in \u00bd tbsp ghee and season to taste.
