{"id":6358,"date":"2025-11-05T06:42:12","date_gmt":"2025-11-05T06:42:12","guid":{"rendered":"https:\/\/blossomcoder.com\/forkonaroad\/?post_type=recipes&#038;p=6358"},"modified":"2025-11-12T03:13:38","modified_gmt":"2025-11-12T03:13:38","slug":"cool-as-a-coconut","status":"publish","type":"recipes","link":"https:\/\/blossomcoder.com\/forkonaroad\/recipes\/cool-as-a-coconut\/","title":{"rendered":"Cool as a Coconut"},"content":{"rendered":"\r\n<h3 class=\"wp-block-heading\">Mint &amp; Coconut Milk Komal<\/h3>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><em>Lassi<\/em>\u00a0or\u00a0<em>chaas<\/em>\u00a0is a big part of Indian cuisine, rooted in Ayurveda, these yogurt drinks are cooling and work as a digestive aid, a fact that we now know as being rich in probiotics that support a healthy gut.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">When I\u2019m in India, every meal is accompanied with the Gujarati version of\u00a0<em>lassi<\/em>\u00a0\u2013\u00a0<em>Chaas<\/em>\u00a0is made from fresh yogurt that my sister sets using that morning\u2019s non-homogenized milk with her day old culture. Wrapped and left alone on the kitchen counter for 3-4 hours, we always have the perfect yogurt for the\u00a0<em>chaas<\/em>\u00a0each meal.<\/p>\r\n\r\n\r\n\r\n<figure class=\"wp-block-video\"><video style=\"aspect-ratio: 720 \/ 720;\" src=\"https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/IMG_6280.mp4\" controls=\"controls\" width=\"720\" height=\"720\"><\/video><\/figure>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Usually flavored with crushed roasted cumin and black salt, my sister Meena, also serves it with a \u2018<em>tadka<\/em>\u2019 or tempering, using curry leaves, whole cumin and a pinch of hing or asafetida, taking the flavors of fresh yogurt to another level. One of my favorite versions with a hint of herbs is served chilled in recycled amber beer bottles at a small hole-in-the-wall\u00a0<em>thali<\/em>\u00a0restaurant in the heart of Bombay\u2019s Zaveri Bazar \u2013\u00a0<a href=\"http:\/\/www.bhagattarachand.com\/website\/restaurant\/restaurant_mumbai.html\" target=\"_blank\" rel=\"noreferrer noopener\">Bhagat Tarachand<\/a>, a place I often haunted during my days as a budding journalist the Times of India down the street.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">This version is called\u00a0<em>Komal<\/em>\u00a0and is inspired by the versions of\u00a0<em>chaas<\/em>\u00a0I have enjoyed in India and a recipe from a cookbook my mother gave me when I got married, by none other than by the guru of Gujarati cooking, the late and talented\u00a0<a href=\"https:\/\/www.tarladalal.com\/about_tarladalal_page1.aspx\" target=\"_blank\" rel=\"noreferrer noopener\">Tarla Dalal<\/a>.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>Serves 8-10<\/strong><\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>Blend:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 can of coconut milk<\/li>\r\n\r\n\r\n\r\n<li>1 container of plain yogurt<\/li>\r\n\r\n\r\n\r\n<li>3-4 cups of water<\/li>\r\n\r\n\r\n\r\n<li>\u00bc cup mint leaves<\/li>\r\n\r\n\r\n\r\n<li>\u00bc cup cilantro<\/li>\r\n\r\n\r\n\r\n<li>\u00bc- \u00bd tsp. fresh ginger<\/li>\r\n\r\n\r\n\r\n<li>1 inch fresh jalape\u00f1o (optional)<\/li>\r\n\r\n\r\n\r\n<li>\u00bd \u2013 1 tsp. ground roasted cumin<\/li>\r\n\r\n\r\n\r\n<li>\u00bc tsp. black salt<\/li>\r\n\r\n\r\n\r\n<li>sea salt if not using black salt (as needed)<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>For the Tempering:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1-2 tbs. olive oil or coconut oil<\/li>\r\n\r\n\r\n\r\n<li>\u00bd tsp. whole cumin<\/li>\r\n\r\n\r\n\r\n<li>1\/8 tsp. asafetida<\/li>\r\n\r\n\r\n\r\n<li>8-10 fresh curry leaves<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ol class=\"wp-block-list\">\r\n<li>Blend all the ingredients on high except the water<\/li>\r\n\r\n\r\n\r\n<li>Add the water to thin out the drink to your liking and store in a glass jar or bottles<\/li>\r\n\r\n\r\n\r\n<li>Adjust the salt and cumin as needed<\/li>\r\n\r\n\r\n\r\n<li>Heat the oil in a small pan, when hot, add the cumin, curry leaves and asafetida<\/li>\r\n\r\n\r\n\r\n<li>Take care not to burn the spices, just want to heat them through and let them bloom<\/li>\r\n\r\n\r\n\r\n<li>Drizzle the tempered spices, curry leaves and oil over the\u00a0<em>komal<\/em>\u00a0in a glass jar and serve chilled<\/li>\r\n<\/ol>\r\n","protected":false},"excerpt":{"rendered":"<p>Mint &amp; Coconut Milk Komal Lassi\u00a0or\u00a0chaas\u00a0is a big part of Indian cuisine, rooted in Ayurveda, these yogurt drinks are cooling and work as a digestive aid, a fact that we now know as being rich in probiotics that support a healthy gut.
