Usually made from&nbsp;<em>suji<\/em>&nbsp;\u2013 semolina or cream of wheat. It\u2019s a quick comfort food for cold January days in New England. Similar to creamy polenta or grits; but unlike grits or polenta, upma is cooked a little bit thicker; letting the moisture evaporate a little more to make its consistency that of cookie dough.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You could add any veggies like diced cabbage, cauliflower, peas, beans or even carrots. Put your own twist to it and make it with quinoa like I did in&nbsp;<a href=\"https:\/\/forkonaroad.com\/2018\/05\/savory-quinoa-breakfast-bowl\/\">this recipe<\/a>&nbsp;from last year. Pair it with something crunchy and spicy like fresh mung-bean sprouts, mango pickle or a fresh coconut chutney and a squeeze of lime.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"500\" height=\"500\" src=\"https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/vaghar_upma_1.jpg\" alt=\"\" class=\"wp-image-6095\" srcset=\"https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/vaghar_upma_1.jpg 500w, https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/vaghar_upma_1-300x300.jpg 300w, https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/vaghar_upma_1-150x150.jpg 150w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Tempring spices\u2026<br><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Serves 2-4<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup suji<\/li>\n\n\n\n<li>\u00bc cup chopped onion<\/li>\n\n\n\n<li>\u00bd cup petit peas<\/li>\n\n\n\n<li>\u00bc tsp. grated ginger<\/li>\n\n\n\n<li>2-3 curry leaves<\/li>\n\n\n\n<li>1 inch piece of jalape\u00f1o<\/li>\n\n\n\n<li>1\/8 tsp. asafetida (hing)<\/li>\n\n\n\n<li>1\/8 tsp. black mustard seeds<\/li>\n\n\n\n<li>\u00bc tsp. split and husked gram lentil (urud dal)<\/li>\n\n\n\n<li>1 tsp. olive oil<\/li>\n\n\n\n<li>\u00bd tsp. lemon juice<\/li>\n\n\n\n<li>Salt to taste<\/li>\n\n\n\n<li>2.5 cups water<\/li>\n\n\n\n<li>1 tbsp. fresh grated coconut<\/li>\n\n\n\n<li>1 tbsp. chopped coriander for garnish<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-video\"><video height=\"1080\" style=\"aspect-ratio: 1920 \/ 1080;\" width=\"1920\" controls src=\"https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/upma_2019-1.mp4\"><\/video><\/figure>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat a thick-bottomed pan on high heat and roast\/toast the\u00a0<em>suji<\/em>\u00a0for 5-7 minutes, stirring constantly so as to not burn the fine grained cereal<\/li>\n\n\n\n<li>When the grains start to toast and you see a few browned particles, pour out into a clean bowl and set aside<\/li>\n\n\n\n<li>Chop the onions, grate the ginger, prep the jalape\u00f1o and wash the curry leaves<\/li>\n\n\n\n<li>Heat the oil in a pan and prepare to temper the\u00a0<em>upma<\/em><\/li>\n\n\n\n<li>Turn the heat to medium, cook the onions until translucent, then add the ginger and peas and stir-fry for another 5 minutes<\/li>\n\n\n\n<li>Add the water to the pan and add the salt and lemon juice, taste the water for your preferred level of salt, bring the water to a rolling boil and then slowly stir in the toasted\u00a0<em>suji<\/em>\u00a0while stirring constantly so as to avoid any lumps<\/li>\n\n\n\n<li>Cover and cook on low heat for 7-10 minutes<\/li>\n\n\n\n<li>Stir, and make sure the\u00a0<em>upma<\/em>\u00a0is not sticking to the bottom of the pan, if that happens, you could put a grilling ring over the stove and then place the pan over the ring and cook using indirect heat; this is a great method to cook something on low heat to avoid burning<\/li>\n\n\n\n<li>Taste for salt, add another squeeze of lemon juice and serve hot garnished with fresh grated coconut, cilantro accompanied with nuts or sprouts<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>A Savory Breakfast Popular in Southern India,&nbsp;Upma&nbsp;was the first thing I learnt to make from my mum when I was around fourteen or fifteen.
