{"id":6080,"date":"2025-11-01T17:03:08","date_gmt":"2025-11-01T17:03:08","guid":{"rendered":"https:\/\/blossomcoder.com\/forkonaroad\/?post_type=recipes&#038;p=6080"},"modified":"2025-11-05T06:36:07","modified_gmt":"2025-11-05T06:36:07","slug":"sunday-sheet-pan-sabzi","status":"publish","type":"recipes","link":"https:\/\/blossomcoder.com\/forkonaroad\/recipes\/sunday-sheet-pan-sabzi\/","title":{"rendered":"Sunday Sheet-Pan Sabzi"},"content":{"rendered":"\n<h1 class=\"wp-block-heading\">Sheet-Pan&nbsp;<em>Sabzi<\/em>&nbsp;\u2013 Roasted Vegetables, Indian Style<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">When I want comfort food, the first thing that comes to mind is&nbsp;<em>dal<\/em>,&nbsp;<em>chawal<\/em>&nbsp;and&nbsp;<em>sabzi<\/em>; or what is a spiced lentil stew served with basmati rice laced with home-made ghee, vegetables cooked with spices, and a crunchy chopped salad,&nbsp;<em>kachombar<\/em>, much like an Israeli salad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Most folks think that Indian food is complicated, but you\u2019d be surprised that most home-cooked Indian food is simple and rustic. You can really taste the flavors of the ingredients in this really simple way that I cook them just on a sheet pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Flavored with some of my&nbsp;<a href=\"https:\/\/forkonaroad.com\/store\/garam-masala\/\">Garam Masala<\/a>, the roasting crisps and caramelizes the vegetables to a perfection. Here\u2019s a couple of options you can make and enjoy this week and serve it with the&nbsp;<a href=\"https:\/\/forkonaroad.com\/store\/five-lentil-dal-with-greens\/\">Five Lentil Dal<\/a>&nbsp;and rice, or even this homemade&nbsp;<a href=\"https:\/\/forkonaroad.com\/2018\/01\/flat-bread-naan\/\">Naan<\/a>, that doubles as a sandwich wrap.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"150\" height=\"150\" src=\"https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/8CD65767-CC06-4DC8-A667-57D7EC8B925D-scaled-1.jpeg\" alt=\"\" class=\"wp-image-6082\"\/><figcaption class=\"wp-element-caption\">Sheet pan it!<\/figcaption><\/figure>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Any Vegetable of Choice \u2013 3 Medium Sized Japanese Eggplant or 1 Small Cauliflower Head<\/li>\n\n\n\n<li>1\/2 tsp. grated ginger<\/li>\n\n\n\n<li>1\/2 tsp. grated garlic<\/li>\n\n\n\n<li>1\/4 jalapeno minced<\/li>\n\n\n\n<li>2 tsp. Garam Masala spice blend<\/li>\n\n\n\n<li>2 tbsp. olive oil<\/li>\n\n\n\n<li>salt to taste<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"150\" height=\"150\" src=\"https:\/\/blossomcoder.com\/forkonaroad\/wp-content\/uploads\/2025\/11\/992A7998-CCAD-4A3F-9CD3-C74047994E5E-scaled-1.webp\" alt=\"\" class=\"wp-image-6083\"\/><figcaption class=\"wp-element-caption\">Cauliflower sabzi<\/figcaption><\/figure>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pre-heat the oven to 375F while you perp the vegetables.<\/li>\n\n\n\n<li>Wash and trim the vegetables, split the eggplants if using, into two, through the center and then into 2\u2033 pieces. If using a cauliflower, quarter the head into wedges, and then further into large pieces. Mince the garlic, ginger and jalapeno.<\/li>\n\n\n\n<li>Place a parchment sheet on the baking sheet, place the vegetable pieces, drizzle with olive oil, and sprinkle with the garam masala, salt to taste and the minced aromatics. Mix with a spatula or your hands, and spread the vegetables evenly on the sheet. Bake for 25-30 minutes.
